As part of this week’s Aldeburgh’s Food & Drink Festival, Suffolk County Council has teamed up with Adnams food chef, Paul Freeman, to showcase his favourite ‘hatewaste’ recipes live on stage to festivalgoers. On Saturday and Sunday at 12 :15pm Paul will be demonstrating his commitment to greener cooking methods by prepaing his ‘Magic Meals from leftovers’ on the Courtyard Stage at Snape Maltings.

The popular Queen’s Head pub chef from Blyford prides himself on his sustainable business which has a ‘no food miles’ pub menu and only uses the produce he grows on site. He recently took over the disused pub and with his wife he hopes to open a village shop next door and to work with the local school to help them grow their own produce.

"This is a great chance for me to enthuse people about reducing their waste and enjoy cooking all the food they have at home," says Paul, who has set up a smallholding at his Suffolk pub. "There are plenty of things you can do with leftovers and it's shocking how much food is thrown away because people think it's of no use. At The Queen's Head, we try not to waste anything, even our new pigs are helping out by eating the vegetable waste from the kitchen! It's a wonderful feeling knowing that we can be self-sufficient and this weekend I’ll be showing people how to use of every last morsel and as a bonus I’ll have recipe ideas to take away.”

Suffolk County Council is one of the major co-sponsors of this year's festival. The sponsorship demonstrates the Council’s support for the local food sector and also supports its aspirations to become Britain's ‘Greenest County’.

The Aldeburgh Food & Drink Festival is a ten day celebration of the abundance of good local food and drink to be found in Suffolk. The main event of the festival takes place in the beautiful surroundings of Snape Maltings, near Aldeburgh on the Suffolk coast from 10am- 4pm Saturday 26 and Sunday 27 September 2009. There will be over 70 local producers, workshops, demonstrations, talks and discussions about Suffolk food. Produce on show will include organic vegetables, fresh and smoked fish, rare breed meat and game, cheeses, frozen yoghurt, jams, beer, wine, lager, salads, local Red Poll burgers, baked bread, sausages, local fish, wraps, crepes and ice creams.

Other ‘reduce waste’ festival activities organised by the county council include a 'Make Your Own Smoothie' pedal power challenge using a bike and gadgets such as a spaghetti measures, bag clips. Members of the public will get the chance to test it out over the weekend.

Admission is £5 per person (under 13s free) and includes a festival programme and jute shopping bag. Parking at Snape Maltings is free. Cool bags will be on sale at the festival to take all your goodies home.
